Ingredients
  • 1 cup Wild rice
  • 1 cup Edamame
  • 1/2 cup Dried cranberries
  • 1/2 small Red onion
  • 1/4 cup Pecans
  • 1/4 cup Fresh parsley
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Cook the wild rice according to package instructions. Drain and let it cool.
  2. In a large bowl, combine the cooked wild rice, edamame, dried cranberries, red onion, pecans, and fresh parsley.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Let the salad rest for 10 minutes to allow the flavors to meld.
