  • 1 cup Couscous
  • 1.5 cup Water
  • 0.5 cup Dried Cranberries
  • 0.25 cup Pistachios
  • 1 bunch Green Onions
  • 0.5 cup Fresh Parsley
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Olive Oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
Instructions
  1. In a medium saucepan, bring water to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
  2. Fluff the couscous with a fork. Add dried cranberries, pistachios, green onions, and fresh parsley. Mix well.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper. Drizzle the dressing over the couscous mixture and toss until well combined.
