Ingredients
  • 1 cup Couscous
  • 2 medium Bell peppers
  • 2 medium Zucchini
  • 1 small Red onion
  • 1 cup Cherry tomatoes
  • 2 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 1 cup Fresh basil leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the bell peppers, zucchini, red onion, cherry tomatoes, garlic cloves, olive oil, salt, and black pepper.
  3. Spread the vegetables on a baking sheet and roast for 20-25 minutes, or until they are tender and slightly charred.
  4. Meanwhile, cook the couscous according to the package instructions.
  5. Once the vegetables are roasted, remove them from the oven and let them cool slightly.
  6. In a serving bowl, combine the roasted vegetables with the cooked couscous.
  7. Garnish with fresh basil leaves.
  8. Serve warm or at room temperature.
