  • 2 cup Dried black-eyed peas
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 piece Smoked ham hock
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Hot sauce
  • 2 stalk Green onions
  • 1 tablespoon Fresh parsley
Instructions
  1. Rinse the dried black-eyed peas and soak them in water overnight.
  2. In a large pot, combine the soaked peas, vegetable broth, chopped onion, minced garlic cloves, and smoked ham hock.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the peas are tender.
  4. Remove the ham hock and shred the meat, discarding the bone.
  5. Return the shredded meat to the pot and season with salt, black pepper, and hot sauce.
  6. Cook for an additional 5 minutes.
  7. Serve the cottoneyed peas hot, garnished with chopped green onions and fresh parsley.
