Ingredients
  • 200 gram Carrots
  • 200 gram Potatoes
  • 150 gram Leeks
  • 150 gram Zucchini
  • 100 gram Green beans
  • 200 gram Tomatoes
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 2 clove Garlic
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 leaf Bay leaf
  • 2 tablespoon Fresh parsley
Instructions
  1. Chop all the vegetables into bite-sized pieces.
  2. Heat olive oil in a large pot over medium heat.
  3. Add garlic and sauté for a minute until fragrant.
  4. Add leeks and sauté until softened.
  5. Add carrots, potatoes, zucchini, and green beans. Stir well.
  6. Pour in vegetable broth and add bay leaf and thyme.
  7. Bring the soup to a boil, then reduce heat and simmer for 20 minutes or until the vegetables are tender.
  8. Add tomatoes and season with salt and black pepper.
  9. Simmer for another 5 minutes.
  10. Remove from heat and let the soup rest for 5 minutes.
  11. Serve hot, garnished with fresh parsley.
