Ingredients
  • 2 cup Corn
  • 1 cup Red bell pepper
  • 1 cup Green bell pepper
  • 1 cup Red onion
  • 3 tablespoon White vinegar
  • 2 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Cumin
  • 2 tablespoon Cilantro
  • 2 tablespoon Lime juice
Instructions
  1. In a large pot, bring water to a boil. Add the corn and cook for 5 minutes. Drain and let cool.
  2. In a bowl, combine the red bell pepper, green bell pepper, red onion, white vinegar, sugar, salt, black pepper, cumin, cilantro, and lime juice.
  3. Cut the cooled corn kernels off the cob and add them to the bowl. Stir well to combine.
  4. Let the corn relish sit for at least 10 minutes to allow the flavors to meld.
  5. Serve chilled as a side dish or topping for tacos, burgers, or grilled meats.
