Ingredients
  • 1 cup Corn kernels
  • 1 cup Coconut milk
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 2 tablespoon Chopped cilantro
  • 2 tablespoon Chopped green onions
  • as needed for frying Vegetable oil
Instructions
  1. In a large bowl, combine the corn kernels, coconut milk, flour, baking powder, salt, cilantro, and green onions.
  2. Mix until well combined.
  3. Heat vegetable oil in a frying pan over medium heat.
  4. Drop spoonfuls of the corn mixture into the hot oil and flatten slightly with the back of the spoon.
  5. Fry until golden brown on both sides.
  6. Remove from the pan and drain on paper towels.
  7. Serve hot with your favorite dipping sauce.
