  • 8 leaf Endive Leaves
  • 200 gram Cherry Tomatoes
  • 150 gram Cucumber
  • 50 gram Red Onion
  • 80 gram Black Olives
  • 100 gram Feta Cheese
  • 20 gram Fresh Mint Leaves
  • 2 teaspoon Lemon Juice
  • 4 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon Salt
Instructions
  1. Wash the endive leaves and pat them dry
  2. In a bowl, combine the cherry tomatoes, cucumber, red onion, black olives, feta cheese, and mint leaves
  3. In a small bowl, whisk together the lemon juice, olive oil, and salt
  4. Drizzle the dressing over the salad ingredients and toss gently
