Ingredients
  • 250 gram Beets
  • 100 gram Arugula
  • 2 teaspoon Sherry Vinegar
  • 2 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon Honey
  • 1 teaspoon Dijon Mustard
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • 50 gram Goat Cheese
  • 30 gram Walnuts
Instructions
  1. Peel and thinly slice the beets.
  2. In a small bowl, whisk together the sherry vinegar, olive oil, honey, Dijon mustard, salt, and black pepper to make the vinaigrette.
  3. In a large bowl, combine the arugula and sliced beets. Pour the sherry vinaigrette over the salad and toss to coat.
