Ingredients
  • 1 bunch Collard Greens
  • 1 can Black Beans
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Olive Oil
  • 1 cup Vegetable Broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 0.5 teaspoon Red Pepper Flakes
  • 1 tablespoon Lemon Juice
Instructions
  1. Wash and remove the stems from the collard greens. Roll the leaves and slice into thin strips.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  3. Add collard greens to the skillet and cook for 5 minutes, stirring occasionally.
  4. Drain and rinse black beans, then add them to the skillet along with vegetable broth, salt, black pepper, and red pepper flakes.
  5. Cover and simmer for 15-20 minutes until the collard greens are tender.
  6. Remove from heat and stir in lemon juice.
  7. Let it rest for 5 minutes before serving.
  8. Serve hot and enjoy!
