Ingredients
  • 1 cup Quinoa
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 1 cup Fresh parsley
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cook quinoa according to package instructions. Let it cool.
  2. Chop cucumber, cherry tomatoes, red bell pepper, red onion, and fresh parsley.
  3. In a large bowl, combine cooked quinoa, chopped vegetables, lemon juice, olive oil, salt, and black pepper.
  4. Mix well and refrigerate for 30 minutes to allow flavors to blend.
