Soak the black beans overnight in water.

Drain and rinse the beans.

In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened.

Add the black beans to the pot and cover with water. Bring to a boil, then reduce heat and simmer for about 30 minutes or until the beans are tender.

Remove from heat and let the soup cool slightly.

Using a blender or immersion blender, puree the soup until smooth.

Stir in lime juice, cilantro, salt, and black pepper.

Chill the soup in the refrigerator for at least 1 hour.

Serve the cold soup garnished with diced avocado and tomato.
