Ingredients
  • 500 gram Carrots
  • 2 teaspoon Coconut oil
  • 1 cup Shredded coconut
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Cilantro
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Peel and slice the carrots into thin sticks.
  3. In a large bowl, toss the carrots with coconut oil, shredded coconut, salt, and black pepper.
  4. Spread the coated carrots onto a baking sheet.
  5. Roast in the preheated oven for 20 minutes, or until the carrots are tender and slightly caramelized.
  6. Remove from the oven and let them rest for 5 minutes.
  7. Garnish with fresh cilantro and serve.
