Ingredients
  • 1 cup Basmati rice
  • 1 cup Coconut milk
  • 1/2 cup Raisins
  • 1 medium Onion
  • 2 clove Garlic
  • 1 piece Cinnamon stick
  • 2 piece Cardamom pods
  • 1 piece Bay leaf
  • 1/2 teaspoon Salt
  • 2 tablespoon Vegetable oil
Instructions
  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a large saucepan, heat the vegetable oil over medium heat. Add the onion, garlic, cinnamon stick, cardamom pods, and bay leaf. Sauté until the onion is translucent and fragrant.
  3. Add the rinsed rice to the saucepan and stir to coat it with the oil and spices.
  4. Pour in the coconut milk and 1 cup of water. Season with salt.
  5. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan. Let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Remove the saucepan from the heat and let the rice rest for 5 minutes.
  7. Fluff the rice with a fork and remove the cinnamon stick, cardamom pods, and bay leaf.
  8. Stir in the raisins.
  9. Serve the coconut-raisin rice pilaf hot and enjoy!
