Ingredients
  • 1 cup Quinoa
  • 2 cup Coconut milk
  • 1 cup Water
  • 1/2 teaspoon Salt
  • 2 tablespoon Shredded coconut
  • 2 tablespoon Cilantro
  • 1 tablespoon Lime juice
Instructions
  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine the quinoa, coconut milk, water, and salt.
  3. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the quinoa is tender and the liquid is absorbed.
  4. Remove from heat and let it rest for 5 minutes.
  5. Fluff the quinoa with a fork and stir in the shredded coconut, cilantro, and lime juice.
  6. Serve hot and enjoy!
