Ingredients
  • 2 cup Coconut flakes
  • 1 cup Almond flour
  • 2 tablespoon Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • 1 cup Dark chocolate chips
  • 1 tablespoon Coconut oil
Instructions
  1. Preheat the oven to 350°F (180°C).
  2. In a mixing bowl, combine the coconut flakes, almond flour, maple syrup, vanilla extract, and salt. Mix well.
  3. Take small portions of the mixture and shape them into small porcupine-like balls.
  4. Place the balls on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  6. In a microwave-safe bowl, melt the dark chocolate chips and coconut oil together.
  7. Once the porcupines are done baking, dip them into the melted chocolate mixture, coating them halfway.
  8. Place the coated porcupines back on the baking sheet and let them rest for 10 minutes to allow the chocolate to set.
  9. Serve and enjoy!
