Ingredients
  • 2 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Shredded coconut
  • 1/2 cup Coconut oil
  • 1/2 cup Coconut milk
  • 1/2 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 2 tablespoon Flaxseed meal
  • 6 tablespoon Water
Instructions
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, and shredded coconut.
  3. In a separate bowl, mix together the coconut oil, coconut milk, maple syrup, vanilla extract, flaxseed meal, and water.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the muffins cool in the tin for 10 minutes.
  8. Transfer the muffins to a wire rack to cool completely.
