Ingredients
  • 2 cup Coconut milk
  • 1 cup Vegetables (e.g., bell peppers, carrots, peas)
  • 1 cup Tofu or chickpeas
  • 2 tablespoon Curry paste
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 1 medium Onion
  • 2 tablespoon Vegetable oil
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 1 tablespoon Lime juice
  • 2 tablespoon Fresh cilantro
Instructions
  1. Heat vegetable oil in a pan and sauté garlic, ginger, and onion until fragrant.
  2. Add curry paste and cook for a minute.
  3. Add vegetables and tofu or chickpeas, and cook for 5 minutes.
  4. Pour in coconut milk, salt, and sugar. Simmer for 15 minutes.
  5. Stir in lime juice and garnish with fresh cilantro.
  6. Serve hot with rice or naan bread.
