Ingredients
  • 1 cup Red Lentils
  • 1 can Coconut Milk
  • 1 medium Onion
  • 2 clove Garlic Cloves
  • 1 teaspoon Ginger
  • 1 teaspoon Curry Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 4 cup Vegetable Stock
  • 2 tablespoon Lime Juice
  • 2 tablespoon Cilantro
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Rinse the lentils under cold water.
  2. In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.
  3. Add the curry powder, turmeric powder, and cumin powder to the pot and cook for another minute.
  4. Add the rinsed lentils, coconut milk, and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the lentils are tender.
  5. Use an immersion blender or a regular blender to blend the soup until smooth.
  6. Stir in the lime juice, cilantro, salt, and black pepper.
  7. Serve hot and garnish with additional cilantro if desired.
