Ingredients
  • 4 teaspoon Lemon juice
  • 2 tablespoon Maple syrup
  • 1 cup Coconut flour
  • 1 cup Shredded coconut
  • 1 teaspoon Lemon zest
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
Instructions
  1. In a mixing bowl, combine lemon juice, maple syrup, coconut flour, shredded coconut, lemon zest, vanilla extract, and salt.
  2. Mix well until the mixture forms a dough-like consistency.
  3. Shape the mixture into small balls and place them on a baking sheet lined with parchment paper.
  4. Refrigerate the balls for at least 1 hour to allow them to firm up.
  5. Once firm, roll the balls in additional shredded coconut to coat them.
  6. Serve and enjoy!
