Ingredients
  • 2 cup Split peas
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery stalks
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 leaf Bay leaves
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 cup Water
Instructions
  1. Rinse the split peas under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, carrot, celery, and minced garlic. Cook until vegetables are softened.
  4. Add split peas, vegetable broth, bay leaves, dried thyme, salt, and black pepper to the pot.
  5. Bring the mixture to a boil, then reduce heat and simmer for about 1 hour or until the split peas are tender.
  6. Remove the bay leaves and use an immersion blender to puree the soup until smooth.
  7. If the soup is too thick, add water to reach the desired consistency.
  8. Serve hot and enjoy!
