Ingredients
  • 2 pound Sweet Potatoes
  • 1 cup Brown Sugar
  • 4 tablespoon Butter
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Vanilla Extract
  • 0.5 teaspoon Salt
  • 0.5 cup Pecans
Instructions
  1. Preheat the oven to 375°F (190°C). Peel and slice the sweet potatoes into 1/2-inch thick rounds.
  2. In a saucepan, melt the butter over medium heat. Stir in the brown sugar, cinnamon, vanilla extract, and salt until well combined.
  3. Place the sweet potato slices in a baking dish and pour the butter mixture over them, tossing to coat evenly.
  4. Cover the dish with foil and bake for 30 minutes. Remove the foil, sprinkle the pecans on top, and bake for an additional 15 minutes or until the sweet potatoes are tender and caramelized.
  5. Let the candied sweet potatoes rest for 10 minutes before serving.
