  • 2 pound Sweet Potatoes
  • 1 cup Orange Juice
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Honey
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Fresh Thyme
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Peel and cut the sweet potatoes into 1-inch cubes.
  3. In a large bowl, combine the orange juice, lemon juice, honey, olive oil, salt, black pepper, and fresh thyme.
  4. Add the sweet potatoes to the bowl and toss until they are well coated with the marinade.
