  • 200 gram Spinach
  • 1 cup Cooked Rice
  • 2 piece Orange
  • 1 piece Grapefruit
  • 1 small Red Onion
  • 50 gram Almonds
  • 2 tablespoon Olive Oil
  • 2 tablespoon Lemon Juice
  • 1 tablespoon Honey
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. In a large bowl, combine the spinach and cooked rice.
  2. Peel and segment the oranges and grapefruit, removing any pith and seeds.
  3. Thinly slice the red onion.
  4. Add the oranges, grapefruit, red onion, and almonds to the bowl.
  5. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper.
  6. Drizzle the dressing over the salad and toss to combine.
  7. Let the salad rest for 5 minutes to allow the flavors to meld.
