  • 2 cup Spinach
  • 2 medium Orange
  • 1 medium Grapefruit
  • 1 small Red Onion
  • 3 tablespoon Almonds
  • 2 tablespoon Olive Oil
  • 2 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Cook the rice according to package instructions.
  2. In a large bowl, combine the cooked rice, spinach, orange segments, grapefruit segments, and thinly sliced red onion.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. Pour the dressing over the salad and toss to combine.
