Ingredients
  • 2 piece Ripe plantains
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg
  • 1 teaspoon Orange zest
  • 1 teaspoon Lime zest
  • 2 tablespoon Freshly squeezed orange juice
  • 1 tablespoon Freshly squeezed lime juice
  • 1/2 teaspoon Vanilla extract
  • 1/2 cup Vegetable oil
  • to taste for dusting Powdered sugar
Instructions
  1. Peel and mash the ripe plantains in a mixing bowl.
  2. In a separate bowl, combine the all-purpose flour, baking powder, salt, ground cinnamon, and ground nutmeg.
  3. Add the orange zest, lime zest, freshly squeezed orange juice, lime juice, and vanilla extract to the mashed plantains. Mix well.
  4. Gradually add the dry ingredients to the plantain mixture, stirring until well combined.
  5. Heat vegetable oil in a frying pan over medium heat.
  6. Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides.
  7. Remove the fritters from the pan and drain on paper towels.
  8. Dust with powdered sugar before serving.
