Ingredients
  • 28 ounce Tomatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Basil leaves
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Sugar
  • 2 tablespoon Heavy cream (optional)
Instructions
  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add diced tomatoes, vegetable broth, salt, black pepper, and sugar. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Stir in chopped basil leaves and cook for an additional 5 minutes.
  6. Remove from heat and let the soup rest for 5 minutes.
  7. Use an immersion blender to blend the soup until desired consistency is reached.
  8. If desired, stir in heavy cream for added creaminess.
  9. Serve hot and garnish with fresh basil leaves.
