Ingredients
  • 100 gram Cashews
  • 1 cup Cucumber
  • 1 cup Cherry tomatoes
  • 1 cup Red bell pepper
  • 1 cup Red onion
  • 1 cup Fresh cilantro
  • 2 teaspoon Lime juice
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. In a large bowl, combine cashews, cucumber, cherry tomatoes, red bell pepper, red onion, and fresh cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately and enjoy!
