Ingredients
  • 200 gram Bell peppers
  • 150 gram Carrots
  • 200 gram Pineapple chunks
  • 100 gram Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 4 tablespoon Tomato ketchup
  • 2 tablespoon Rice vinegar
  • 2 tablespoon Soy sauce
  • 1 tablespoon Sugar
  • 1 tablespoon Cornstarch
  • 1 cup Water
  • 2 tablespoon Vegetable oil
Instructions
  1. Heat vegetable oil in a wok or large skillet over medium-high heat.
  2. Add garlic and ginger, and sauté for 1 minute.
  3. Add bell peppers, carrots, and onion, and stir-fry for 3-4 minutes until vegetables are slightly tender.
  4. In a small bowl, mix together tomato ketchup, rice vinegar, soy sauce, sugar, cornstarch, and water.
  5. Pour the sauce mixture into the wok and stir well.
  6. Add pineapple chunks and cook for an additional 2 minutes.
  7. Reduce heat to low and let the vegetables simmer for 5 minutes.
  8. Serve hot with steamed rice or noodles.
