  • 2 teaspoon Cornstarch
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Vegetable oil
Instructions
  1. Cut the eggplant into long, thin strips.
  2. In a bowl, mix cornstarch, salt, and black pepper.
  3. Coat the eggplant strips with the cornstarch mixture.
  4. Heat vegetable oil in a frying pan.
  5. Fry the coated eggplant strips until golden brown.
  6. Remove from the pan and let them rest for 5 minutes.
