Ingredients
  • 4 ounce Cellophane noodles
  • 1 cup Carrots
  • 1 cup Cucumber
  • 1 cup Red bell pepper
  • 0.5 cup Green onions
  • 0.5 cup Fresh cilantro
  • 2 teaspoon Sesame seeds
  • 3 tablespoon Soy sauce
  • 2 tablespoon Rice vinegar
  • 1 tablespoon Sesame oil
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 1 tablespoon Honey
  • 2 tablespoon Lime juice
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook the cellophane noodles according to the package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked noodles, carrots, cucumber, red bell pepper, green onions, and cilantro.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, honey, lime juice, salt, and black pepper.
  4. Pour the dressing over the noodle mixture and toss until well coated.
  5. Let the salad rest for 10 minutes to allow the flavors to meld.
  6. Sprinkle with sesame seeds before serving.
  7. Serve chilled and enjoy!
