Ingredients
  • 2 cup English peas
  • 2 cup Vegetable broth
  • 1 medium Onion
  • 2 cloves Garlic cloves
  • 2 tablespoon Lemon juice
  • 2 tablespoon Fresh mint leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Olive oil
Instructions
  1. In a large saucepan, heat olive oil over medium heat. Add chopped onion and garlic cloves, and sauté until translucent.
  2. Add English peas and vegetable broth to the saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes.
  3. Remove from heat and let the mixture cool slightly.
  4. In a blender, puree the pea mixture until smooth.
  5. Stir in lemon juice, fresh mint leaves, salt, and black pepper.
  6. Transfer the soup to a bowl and refrigerate for at least 30 minutes.
  7. Serve chilled and garnish with fresh mint leaves, if desired.
