Ingredients
  • 500 gram Carrots
  • 2 cup Vegetable broth
  • 1 small Onion
  • 2 clove Garlic
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 2 tablespoon Fresh cilantro
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Peel and chop the carrots, onion, and garlic.
  2. Heat olive oil in a large pot and sauté the onion and garlic until softened.
  3. Add the carrots and vegetable broth to the pot and bring to a boil. Reduce heat and simmer until the carrots are tender.
  4. Remove from heat and let the mixture cool slightly.
  5. Transfer the mixture to a blender and blend until smooth.
  6. Stir in lemon juice, cilantro, salt, and black pepper.
  7. Refrigerate for at least 30 minutes to chill.
  8. Serve chilled and garnish with fresh cilantro.
