Ingredients
  • 8 ounce Glass noodles
  • 1 cup Red bell pepper
  • 1 cup Carrots
  • 1 cup Cucumber
  • 1 cup Fresh cilantro
  • 0.5 cup Roasted peanuts
  • 3 tablespoon Lime juice
  • 2 tablespoon Soy sauce
  • 1 tablespoon Honey
  • 2 clove Garlic
  • 1 teaspoon Red chili flakes
  • 0.5 teaspoon Salt
Instructions
  1. Cook the glass noodles according to package instructions. Drain and set aside.
  2. In a large bowl, combine lime juice, soy sauce, honey, garlic, red chili flakes, and salt. Mix well.
  3. Add the cooked glass noodles to the bowl and toss to coat them with the sauce.
  4. Add the sliced red bell pepper, carrots, cucumber, fresh cilantro, and roasted peanuts to the bowl. Mix well.
  5. Let the dish rest for 5 minutes to allow the flavors to meld together.
  6. Serve the Chile-Lime Glass Noodles garnished with additional cilantro and peanuts, if desired.
