Ingredients
  • 400 gram Chickpeas
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 2 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 2 tablespoon Tomato paste
  • 1 cup Vegetable broth
  • 2 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
Instructions
  1. Rinse and drain the chickpeas.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion and minced garlic cloves. Sauté until the onion is translucent.
  4. Add the ground cumin, ground coriander, and paprika. Stir well.
  5. Add the tomato paste and mix until well combined.
  6. Add the chickpeas and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Stir in the lemon juice, salt, and black pepper.
  8. Remove from heat and let it rest for a few minutes.
  9. Serve hot, garnished with fresh cilantro.
