Ingredients
  • 250 gram Chickpeas
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 2 medium Carrots
  • 2 medium Potatoes
  • 2 medium Tomatoes
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic cloves. Sauté until onions are translucent.
  2. Add diced carrots and potatoes to the pot. Stir and cook for 5 minutes.
  3. Add cumin, paprika, salt, and black pepper. Stir well to coat the vegetables.
  4. Pour in vegetable broth and bring to a boil. Reduce heat to low and simmer for 30 minutes, or until the vegetables are tender.
  5. Add chickpeas and diced tomatoes to the pot. Stir and cook for an additional 10 minutes.
  6. Remove from heat and let the stew rest for 5 minutes.
  7. Serve hot, garnished with fresh parsley.
