Ingredients
  • 1 can Chickpeas
  • 2 medium Kumara
  • 1 small Red onion
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 cup Feta cheese
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 200°C (400°F). Drain and rinse the chickpeas. Peel and chop the kumara into bite-sized pieces. Place the kumara on a baking sheet, drizzle with olive oil, and sprinkle with salt. Roast in the oven for 20-25 minutes until golden and tender. Meanwhile, thinly slice the red onion, halve the cherry tomatoes, dice the cucumber, and crumble the feta cheese. In a large bowl, combine the roasted kumara, chickpeas, red onion, cherry tomatoes, cucumber, feta cheese, and fresh parsley. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper. Drizzle the dressing over the salad and toss to combine. Serve the chickpea and kumara salad chilled or at room temperature.
