Ingredients
  • 2 cup Coconut milk
  • 1 cup Sugar
  • 3 tablespoon Cornstarch
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • 1 cup Shredded coconut
Instructions
  1. In a saucepan, combine coconut milk, sugar, cornstarch, vanilla extract, and salt.
  2. Cook over medium heat, stirring constantly until the mixture thickens.
  3. Remove from heat and let it cool for 5 minutes.
  4. Pour the mixture into individual serving dishes and refrigerate for at least 1 hour.
  5. Toast shredded coconut in a pan until golden brown.
  6. Sprinkle toasted coconut on top of the chilled pudding before serving.
