Ingredients
  • 2 cup Anasazi beans
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 1 large Bell pepper (any color)
  • 1 can Canned diced tomatoes
  • 2 tablespoon Tomato paste
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cup Vegetable broth
  • 1 tablespoon Lime juice
  • 2 tablespoon Fresh cilantro
  • 1 medium Avocado (optional)
  • 1 cup Tortilla chips (optional)
Instructions
  1. Rinse and drain the Anasazi beans.
  2. Chop the onion, garlic cloves, and bell pepper.
  3. Set the pressure cooker to sauté mode and add the chopped onion, garlic, and bell pepper. Sauté for 5 minutes.
  4. Add the Anasazi beans, canned diced tomatoes, tomato paste, chili powder, ground cumin, dried oregano, salt, black pepper, and vegetable broth to the pressure cooker.
  5. Close the pressure cooker lid and set the cooking time to 30 minutes.
  6. Once the cooking time is complete, allow the pressure to release naturally for 5 minutes, then carefully release any remaining pressure.
  7. Stir in the lime juice and fresh cilantro.
  8. Serve hot with sliced avocado and tortilla chips, if desired.
