Ingredients
  • 800 gram Potatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Olive oil
  • 1 cup Vegetable broth
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 375°F (190°C). Peel and thinly slice the potatoes.
  2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until fragrant and translucent.
  3. Grease a baking dish with olive oil. Arrange a layer of sliced potatoes in the bottom of the dish, slightly overlapping. Sprinkle with salt, pepper, and fresh thyme.
  4. Repeat the layers until all the potatoes are used, finishing with a layer of potatoes on top.
  5. Pour vegetable broth over the potatoes, cover with foil, and bake for 30 minutes.
  6. Remove the foil and bake for an additional 15 minutes, or until the potatoes are golden brown and tender.
  7. Let the dish rest for 10 minutes before serving. Garnish with additional fresh thyme if desired.
