Ingredients
  • 500 gram Celery Root
  • 300 gram Apple
  • 1 cup Vegetable Stock
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Peel and chop the celery root and apple into small pieces.
  2. In a pot, bring the vegetable stock to a boil.
  3. Add the celery root and apple to the pot and cook until tender, about 15 minutes.
  4. Drain the cooked celery root and apple, reserving some of the cooking liquid.
  5. In a blender, add the cooked celery root and apple, olive oil, salt, and black pepper.
  6. Blend until smooth, adding some of the reserved cooking liquid if needed.
  7. Serve the celery root and apple puree warm.
