Ingredients
  • 500 gram Cauliflower Florets
  • 200 gram Cherry Tomatoes
  • 150 gram Cucumber
  • 100 gram Red Onion
  • 20 gram Fresh Parsley
  • 2 teaspoon Lemon Juice
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Bring a pot of water to boil and blanch the cauliflower florets for 2 minutes. Drain and set aside.
  2. In a large bowl, combine the cherry tomatoes (halved), cucumber (diced), red onion (thinly sliced), and fresh parsley (chopped).
  3. Add the blanched cauliflower florets to the bowl.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the salad and toss gently to combine.
