Ingredients
  • 1 head Cauliflower
  • 2 medium Carrots
  • 2 medium Bell peppers
  • 1 head Broccoli
  • 1 cup Frozen peas
  • 2 tablespoon Soy sauce
  • 1 teaspoon Sesame oil
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 3 stalks Scallions
  • 2 large Eggs
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cut the cauliflower into florets and pulse them in a food processor until they resemble rice.
  2. Heat sesame oil in a large skillet or wok over medium heat.
  3. Add minced garlic and ginger, and sauté for about 1 minute.
  4. Add the cauliflower rice to the skillet and stir-fry for 3-4 minutes.
  5. Push the cauliflower rice to one side of the skillet and crack the eggs into the other side.
  6. Scramble the eggs until cooked through, then mix them into the cauliflower rice.
  7. Add the chopped carrots, bell peppers, broccoli, and frozen peas to the skillet.
  8. Stir in soy sauce, salt, and black pepper.
  9. Cook for an additional 4-5 minutes, or until the vegetables are tender-crisp.
  10. Garnish with chopped scallions and serve hot.
