Ingredients
  • 500 gram Carrots
  • 100 gram Onion
  • 4 cup Vegetable broth
  • 2 piece Star anise
  • 1 cup Coconut milk
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 20 gram Fresh cilantro
Instructions
  1. Peel and chop the carrots and onion.
  2. In a large pot, add the vegetable broth, carrots, onion, and star anise. Bring to a boil and let it simmer for 20 minutes or until the carrots are tender.
  3. Remove the star anise and blend the soup until smooth using an immersion blender or a regular blender.
  4. Return the soup to the pot and stir in the coconut milk, lime juice, salt, and black pepper. Heat the soup over medium heat until warmed through.
  5. Serve the carrot soup hot, garnished with fresh cilantro.
