Ingredients
  • 500 gram Carrots
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until onion is translucent.
  2. Add carrots, vegetable broth, ground cumin, ground coriander, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until carrots are tender.
  3. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth.
  4. Return the soup to the pot and stir in coconut milk. Cook for an additional 5 minutes, until heated through.
  5. Serve hot and garnish with fresh herbs, if desired.
