  3. Add the chopped onion and garlic cloves to the pot and sauté until fragrant.
  4. Add the chopped carrots to the pot and cook for a few minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce the heat and let the soup simmer for about 20 minutes, or until the carrots are tender.
  7. Use an immersion blender to puree the soup until smooth.
  8. Stir in the coconut milk and season with salt and black pepper.
  9. Let the soup simmer for another 5 minutes.
  10. Serve hot, garnished with fresh parsley.
