Ingredients
  • 500 gram Carrots
  • 2 cup Orange juice
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 1 cup Coconut milk
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
Instructions
  1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger. Cook until onion is translucent.
  2. Add carrots and vegetable broth. Bring to a boil and then reduce heat to simmer for 20 minutes, until carrots are tender.
  3. Remove from heat and let it cool slightly. Then, blend the soup until smooth using a blender or immersion blender.
  4. Return the soup to the pot and stir in orange juice, coconut milk, salt, and black pepper. Heat over medium heat until warmed through.
  5. Serve hot, garnished with fresh cilantro.
