Ingredients
  • 500 gram Carrots
  • 100 gram Onion
  • 200 gram Potato
  • 4 cup Vegetable broth
  • 2 tablespoon Fresh dill
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Coconut milk
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. Add chopped carrots and potatoes, and cook for 5 minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until vegetables are tender.
  4. Remove from heat and let cool slightly. Blend the soup until smooth using an immersion blender or a regular blender.
  5. Return the soup to the pot and stir in fresh dill, salt, and black pepper. Cook for an additional 5 minutes.
  6. Stir in coconut milk and heat through.
  7. Serve hot and garnish with additional fresh dill if desired.
