Ingredients
  • 1 cup Quinoa
  • 1 cup Cherry tomatoes
  • 1 cup Cucumber
  • 1 cup Red bell pepper
  • 1 cup Red onion
  • 1 cup Fresh parsley
  • 1 cup Fresh mint
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cook quinoa according to package instructions.
  2. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red bell pepper, red onion, fresh parsley, and fresh mint.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the quinoa salad and toss to combine.
  5. Let the salad rest for 10 minutes before serving.
  6. Serve chilled and enjoy!
