Ingredients
  • 2 cup White beans
  • 1 cup Coconut milk
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Bell pepper
  • 1 pepper Scotch bonnet pepper
  • 1 teaspoon Thyme
  • 1 teaspoon Allspice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 1 tablespoon Lime juice
  • 2 tablespoon Fresh cilantro
Instructions
  1. Rinse and soak the white beans overnight.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, and diced bell pepper. Cook until softened.
  3. Add soaked white beans, coconut milk, thyme, allspice, salt, black pepper, and Scotch bonnet pepper (whole). Bring to a boil, then reduce heat and simmer for about 1 hour or until beans are tender.
  4. Remove Scotch bonnet pepper and discard. Stir in lime juice.
  5. Serve hot, garnished with fresh cilantro.
